Originally from Tasmania, Jerome Dalton’s love for unique cuisine and desire to learn new techniques has taken him to 40+ countries and he has lived and worked in England, Spain and South Africa. Though now rooted in Brisbane, be it pickling herring in Sweden or pounding green pawpaw with Thai grandmothers in Chiang Rai, Jerome seeks adventure in both life and food.

Jerome Dalton’s 30+ years in the hospitality and catering industries mean for him that while staying true to constant food development, attention to detail and a high level of service is what counts, no matter what happens in the world of gastronomy, hospitality and conviviality remain paramount .

To this day, Jerome believes that he is only as good as his last event and continues to push the boundaries of catering to deliver the best experience for his clients and their guests every time.
